I give up!

I swear every time I try to make something new or even slightly different in the kitchen it turns into a giant disaster! Case in point, this morning's peanut butter and jelly muffins. Sounds good, huh? You make the muffin mix and then drop a spoonful of jelly on the top of each muffin. So what happens when you put the pan in the oven and come back 20 minutes later? The jelly liquified, ran all over the muffin pan and the bottom of the oven. The kitchen is smoky and it smells like the house is burning down. Disgusting, sticky mess in the bottom of the oven. Disgusting, sticky mess on my only muffin pan and muffins that look like this:

I managed to extract about half the muffins, but the rest are going to have to come out with a spoon.

I'm so pissed! I waste all that time and this is what I get! Crappy muffins and a giant mess to clean up. And this happens over and over. I can't make anything without something like this happening. I think I should stick to straight from the box to the oven from now on. That seems to go okay:
